These are the ingredients for dinner this evening.

As you can see, the rib eye was on sale. Thanks to my husband who is constantly scouring the meat department to find the best deals. This was an easy dinner.

I recommend using a cast iron pan for any steak that you are cooking on the stove. Make sure to preheat the oven to 325. The rules of cooking steak are quite simple. First, make sure the pan is screaming hot. I did add olive oil to heat with the pan. Two tablespoons should be plenty. Do not allow the oil to burn. When you put your hand over it to test the heat, you should want to take your hand away quickly. Yes you might need to turn on the fan on the oven and maybe open a door or window. It will get smoky in the house. Trust me!

This is the steak flipped after 5 minutes on the first side. It should have a nice sear on it. I should mention that if you have a great piece of meat. A little salt and pepper is all it should need. Of course this is a matter of taste and you should add whatever seasonings you wish.

After you flip the steak it will need to cook on the other side for 4 minutes. Put the steak in the oven for about 5 minutes. Then take out to rest on a plate like this. It will need to rest for about 10 minutes. This is a crucial step. While this was resting I cooked the sweet potato in the microwave for about 5 minutes. The veggies also went into the microwave for about 7 minutes in their bag.

Perfection!!! This was so tasty and super easy!
