Budget Friendly Chicken For 4

So I obviously came up with this recipe on a whim. I had previously frozen a large amount of chicken breast that I found on sale. I thawed only one out to use and it was quite large. I took a picture of the cooking process throughout. I started off with the chicken breast, a zucchini, I also used a couple of green olives, olive oil, one carrot and a couple of pieces of finely diced celery. I also used up some great northern beans that I had previously cooked from scratch and frozen. I took these back out of the freezer and proceeded to add some of the leaves from the celery on top. I then cooked them in the microwave for about 3 minutes at a time with a little oil drizzled on top. I did this 3 times or 9 minutes. I also added a little salt and pepper. They were fantastic.



The zucchini I made fancy with the spiralizer but this is unnecessary of course. These can always be chopped up finely and cooked as long as you like. I personally don't like them as far as I cooked them down. I also made more of a naan bread component with the soft tortilla shells. I cooked these with a little butter on the flat top on 6 just to give some color and crunch. These were super good with the beans.


Although, this dinner compromised of more than than I would normally like. It was well worth it and the the price. The price was very little and would have easily feed three people or perhaps 4 just depending on the appetite.
